I was recently writing about the need for quick and easy meals, whether you’re playing the part-time single mom, are a busy working mom, or just having a crazy day! So I thought I’d collect some go-to recipes here. Drop me a line if you have any to add! (Note: I’m not receiving any compensation for the products I mention!)

Love Chicken Pot Pie, but loathe the work and effort it takes to make? Try Paula Dean’s Hurry Up Chicken Pot Pie! It takes only 5-10 minutes to prep, and then you just sit back and relax while it cooks for about 40 minutes. I’ve got one in the oven right now, and it smells sooooo good! A few tips: You can reduce or even eliminate all that butter on top (A whole stick?! Really, Paula, that’s a bit much even for you!). I just put in a cup of frozen mixed veggies, but you could put in any frozen veggies you like.

Soup Night is another great idea. With Aleksander still on finger foods, I like to keep a couple cans of Campbell’s Sirloin Burger (the Healthy Request version is lower in sodium) on hand for all of its soft veggies and easy-to-chew meat. Chicken Noodle is nice, too, but doesn’t have as many veggies. Of course, you can always toss in extra frozen peas! I usually make some Pillsbury biscuits to go with it.

Baked Chicken is also a breeze with the help of Chef Prudhomme’s Poultry Magic seasoning. Just sprinkle on the chicken and bake as normal!

Salmon is another one of my go-to meals. Again I use Chef Prudhomme’s seasoning – this time Salmon Magic. Just sprinkle over the fish and toss in the oven – about 20 minutes on 425, depending on the size and thickness of the fish.
